A kettle, a carboy,
three weeks.

Home brewing is the most forgiving of the kitchen chemistry hobbies. The ingredients are cheap, the equipment fits in a closet, and the mistakes are usually drinkable. The first batch is the hardest only because you don't know what you don't know. The second batch is the one that teaches you what the first batch was missing.

The five ingredients of beer

Beer is barley + hops + yeast + water + time. That is the whole list. The rest is variation.

Beer is a beverage produced by the fermentation of sugars derived from cereal grain, most commonly malted barley. The sugars are extracted by steeping crushed grain in hot water (a process called mashing), the resulting liquid (wort) is boiled with hops for bitterness and aroma, cooled, and fermented by yeast. The yeast eats the sugar and excretes alcohol and CO2. After two to three weeks in a sealed container, the result is beer.

The grainMalt and what it does

Malted barley is grain that has been allowed to germinate, then kilned. The germination activates enzymes that convert starches into sugars; the kilning stops the process and adds color and flavor. Pale malt is the base of every beer; it produces a clean, light wort. Crystal malts add caramel sweetness and color. Roasted malts add coffee, chocolate, and burnt-bread notes. Munich and Vienna malts add bready, biscuit-y depth. The first batch uses only pale malt extract; the second batch introduces specialty grains.

The hopsBittering, flavor, aroma

Hops are the flowers of the hop plant, Humulus lupulus. They contain alpha acids (which add bitterness) and essential oils (which add flavor and aroma). Bittering hops are boiled for 60+ minutes; flavor hops for 15–30 minutes; aroma hops for 0–5 minutes or in the fermenter (dry hop). The most common beginner hop is Cascade — citrusy, slightly grapefruity, balanced enough that it cannot ruin a batch. Centennial, Citra, and Mosaic come later.

The yeastAlive, single-celled, the engine

Yeast is a single-celled organism that eats sugar and excretes ethanol and CO2. The most common species in brewing is Saccharomyces cerevisiae (top-fermenting, used for ales) and Saccharomyces pastorianus (bottom-fermenting, used for lagers). Dry yeast packets (Safale US-05, Saflager W-34/70) are cheap, reliable, and store for two years in the fridge. Liquid yeast cultures produce more complex flavors but require a starter. The first batch uses dry yeast; nothing else is necessary.

The water90% of beer, by weight

Beer is 90–95% water. The mineral content of the water matters — not as much as the brewmaster forums will tell you, but more than zero. In the High Country, municipal water from Boone, Newland, and Burnsville is moderately soft and lightly chlorinated. The chlorine will produce "plastic" off-flavors in finished beer; boiling or leaving the water out overnight removes it. For the first three batches, that is the entire water story.

The timeThree weeks, end to end

Most beginner recipes target 2–3 weeks from grain to glass: 1 day of active brewing, 7–10 days of primary fermentation, 7–10 days of bottle conditioning. Lagers take longer (4–6 weeks). The impatient path is to keg with forced carbonation; the disciplined path is to wait. Most brewers who quit the hobby quit because they opened a bottle at week 1. Don't open it at week 1.

Equipment for batch one

~$250 gets you everything you need for the first five extract batches. The list is below; do not buy more than this until you have brewed at least three batches.

The fermenterGlass carboy or plastic bucket

A 6.5-gallon glass carboy (~$40) or a 6.5-gallon plastic fermentation bucket with spigot (~$30) is the primary fermenter. Glass is more durable, more sanitary, and easier to clean. Plastic is cheaper and lighter. Most beginners start with a plastic bucket and add the glass carboy when they want to do secondary fermentation. Buy a rubber stopper and an airlock at the same time; the airlock is a one-way valve that lets CO2 out and keeps oxygen and contamination in.

The kettleAt least 4 gallons, stainless preferred

The boil kettle is the second-most important piece of equipment. Anything 4+ gallons that is food-grade stainless steel will work. The 8-gallon Bayou Classic (~$80) is the standard recommendation; it is wide enough for vigorous boils without boilover and tall enough to allow 5–6 gallons of pre-boil wort. A 5-gallon stock pot from Walmart will work for a single extract batch but cuts the headroom dangerously close.

The stoveA standard electric range will do

An electric coil or smooth-top range will bring 3–5 gallons to a rolling boil. The High Country's elevation (~3,800') drops the boiling point to about 204°F instead of 212°F. The drop is not a problem for extract brewing; the boil still concentrates the wort, isomerizes the hop acids, and drives off DMS. If you want the next step, a propane burner (~$80) on a porch or patio gives faster ramp times and enough BTUs for a vigorous boil on a 6–8 gallon batch.

The bottlesReusable or one-way

A standard case is 24 12-oz bottles. Reusable brown glass bottles with pry-off caps cost about $1 each new; used bottles from friends or local homebrew shops run 50–75¢ each. You will need two cases (48 bottles) for a 5-gallon batch, plus caps and a bottle capper (~$25 for a handheld, $40 for a benchtop). The benchtop is worth the extra $15; the handheld blisters your palm.

The small stuffHydrometer, thermometer, sanitizer

Three small tools make the difference between a good batch and a great one. A hydrometer (~$10) measures the sugar content of the wort and the finished beer; the difference tells you the alcohol by volume. A thermometer (~$10) tells you the mash and fermentation temperatures. Star San (~$15) is a no-rinse sanitizer that kills contamination in 90 seconds. The three together cost $35 and are the difference between guessing and knowing.

The process, start to glass

A 5-gallon extract batch takes 4–5 hours of active work. The other 3 weeks are the yeast's job.

The dayBoil, cool, pitch, seal

  1. Sanitize everything. Mix Star San per the bottle. Soak the fermenter, lid, stopper, airlock, hydrometer jar, and any spoons or funnels for 90 seconds. Drain, do not rinse.
  2. Heat 2.5–3 gallons of water to 160°F. Turn off the heat. Stir in the dried malt extract (DME) one cup at a time until fully dissolved. Add any steeping specialty grains in a muslin bag; steep 20 minutes, then remove.
  3. Bring to a boil. Once boiling, set a timer. Add the bittering hops at 60 minutes. Add flavor hops at 15 minutes. Add aroma hops at 5 minutes. Add Irish moss (or Whirlfloc) at 15 minutes for clarity.
  4. Cool the wort to 70°F as fast as possible. An ice bath in the sink works; a wort chiller (~$50) is faster. The faster the cool, the cleaner the fermentation. A wort that stays above 80°F for hours produces off-flavors.
  5. Aerate and pitch the yeast. Pour the cooled wort into the sanitized fermenter, splash it around to aerate, and pour in the yeast packet. Seal with the stopper and airlock. Fill the airlock to the line with Star San or vodka.

The two weeksFermentation, then bottling

Within 24–48 hours, the airlock will start bubbling — CO2 escaping as the yeast eats sugar. Leave the fermenter alone for 7–10 days at 65–70°F. Don't open it. Don't move it. Don't sniff it. After 7 days, take a hydrometer reading. If the gravity is the same on day 10 as on day 7, fermentation is done.

To bottle, dissolve 0.75 cups of priming sugar in 2 cups of boiling water, pour it into the bottom of the sanitized bottling bucket, siphon the beer on top, mix gently, and fill each bottle to 1 inch of headspace. Cap. Store at room temperature for 2 weeks — the priming sugar carbonates the beer in the bottle. After 2 weeks, refrigerate to keep the carbonation stable.

The troubleshootingThe 5 problems you will hit

  • No bubbles in the airlock. Either the airlock is not sealed (check the stopper) or the fermentation is fermenting slowly (cold fermenter, old yeast). Wait 72 hours. If still nothing, repitch.
  • Bottle bombs. Too much priming sugar or warm storage. A bottle that over-carbonates is a grenade. If bottles feel rock-hard, refrigerate them all immediately and open cold over a sink.
  • Off-flavors (cidery, sour, diacetyl). Almost always: temperature was too high during fermentation, or fermentation was too short. Cooler and longer is the cure.
  • Stuck fermentation. Gravity stops dropping. Usually cold fermenter. Warm to 70°F, rouse the yeast by gently rocking the fermenter, wait 48 hours.
  • Infection. Pellicle (floating film), rope (stringy snot), pink coloration, or vinegary off-flavors. The batch is a loss; sanitize everything that touched it; start over.

The High Country elevation adjustment. At 3,800', the boiling point is ~204°F. For extract brewing, the drop is harmless. For all-grain brewing (step mashing, decoction mashing), the drop matters and you will need a longer boil to compensate. For now, stick with extract.

Water and fermentation temperature

The two things you can control that have the biggest impact on finished beer. Yeast is the engine; the other four ingredients are the fuel.

WaterLocal source, off-flavors, easy fix

Municipal water in the High Country is moderately soft, with a mineral content that produces a clean, neutral base for pale ales. The two issues to address are chlorine (which produces "plastic" off-flavors) and chloramine (which does not boil off). Both are fixed by either boiling the water for 5 minutes, leaving it out overnight uncovered, or adding one crushed Campden tablet per 20 gallons. The first batch uses whatever comes out of the tap; subsequent batches treat the water.

For extract brewing, water chemistry is a second-order concern; the malt extract provides the minerals. For all-grain brewing, water chemistry becomes a first-order concern. Skip water chemistry for the first five extract batches; pick it up when you move to all-grain.

TemperatureThe single most important variable

Ale yeast (Safale US-05) ferments best at 62–72°F. Below 60°F, the yeast stalls. Above 75°F, the yeast produces fusel alcohols and fruity esters that read as off-flavors in a clean beer. The High Country cabin in summer can hit 78°F without air conditioning; the fermenter needs to stay below 72°F. A wet t-shirt on the fermenter with a small fan blowing on it is the cheap fix. A chest freezer with a temperature controller (~$100) is the proper fix.

The cabin in winter is the opposite problem. A closet near a wood stove can hit 80°F. A basement or unheated room will hold 55–65°F — good for lagers, slow for ales. Either move the fermenter or wrap it in a sleeping bag with a hand-warmer inside.

Pitch rateWhy your second batch is better

The first batch almost always under-pitches. A single packet of dry yeast is enough for a 5-gallon batch with an original gravity below 1.060; above that, you need two packets or a starter. Under-pitched yeast produces off-flavors. The fix is to make a starter: boil 1 cup of DME in 2 cups of water, cool to 70°F, pitch the yeast, cover loosely, wait 12 hours, then pitch the whole thing into the wort. The starter takes one evening and prevents the off-flavors that ruin first batches.

Three starter recipes

Each makes 5 gallons. Each is forgiving. Each teaches a different skill. Brew them in order: pale ale (extract, single infusion), then brown ale (extract with steeping grains), then porter (extract with darker specialty grains).

High Country Pale Ale

6.6 lb light DME. 1 oz Cascade (60 min). 1 oz Cascade (15 min). 1 oz Cascade (5 min). 1 oz Cascade (dry hop, day 7). Safale US-05 yeast. Ferment 7–10 days at 66°F. Bottle condition 2 weeks. Clean, citrusy, balanced. The Cascade hops are what you smell; the malt is the canvas.

Appalachian Brown Ale

OG 1.054FG 1.014ABV 5.2%IBU 25

5 lb light DME + 1 lb Munich DME. 8 oz crystal 60L (steeped). 4 oz chocolate malt (steeped). 1 oz East Kent Goldings (60 min). 1 oz Fuggles (15 min). Safale S-04 yeast. Ferment 10 days at 68°F. Nutty, malty, low bitterness, finishes dry. Pairs with a fire pit and a flannel.

Roan Mountain Porter

OG 1.060FG 1.016ABV 5.8%IBU 32

5 lb pale DME + 0.5 lb crystal 80L + 0.5 lb chocolate malt + 0.5 lb roasted barley (all steeped). 1 oz Magnum (60 min). 1 oz East Kent Goldings (15 min). 0.5 oz East Kent Goldings (5 min). Safale S-04 yeast. Ferment 12 days at 68°F. Dark, full-bodied, dry finish, restrained roast. December-in-the-cabin beer.

After the third batch. You will know whether the hobby is for you. If it is, the next step is all-grain brewing (BIAB — brew in a bag — is the simplest entry, with a $30 grain bag and a 10-gallon kettle). If it is not, you have $250 of equipment that resells for $150 and a freezer full of beer. Both outcomes are fine.
